1.  BIGA is a type of pre-fermentation process, originating in southern Italy.
2. BIGA dough ferments for longer and uses less yeast and salt than standard pizza dough, making it easy to digest and extra fluffy.

We let our BIGA dough ferment for longer than other restaurants, allowing deeper flavours to develop. The result? A rich and complex dough that’s low in gluten and easy to digest. It’s also dough-licious.

THE JOURNEY TO DOUGH-LICIOUSNESS

Head Chef Carlo started studying fermentation and bread-making techniques in Sicily, working with ancient grains and experimenting with different sourdough and starters. 

“I wanted to learn from the best, and no doubt the best are in Naples”

Carlo studied under master Napoli pizzaiolos, developing his signature dough recipe over the span of fifteen years.

Drawing upon regional flavours and techniques, the chefs use their roots to celebrate the flavours of Italy – particularly the freshness of Sicilian cooking.
